Vodka Sauce

Here’s a simple and delicious recipe for a creamy vodka sauce:


Ingredients:

2 tbsp olive oil

2 tbsp unsalted butter

1 small onion, finely diced

3-4 cloves garlic, minced

1/2 tsp red pepper flakes (optional, for a touch of heat)

1/2 cup vodka

1 can (28 oz) crushed tomatoes (San Marzano tomatoes work well)

1 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and freshly ground black pepper to taste

Fresh basil (optional, for garnish)


Instructions:

1. Heat Oil and Butter:

Heat the olive oil and butter in a large skillet over medium heat until melted.

2. Cook Aromatics:

Add the diced onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and red pepper flakes (if using) and cook for 1 minute, being careful not to burn the garlic.

3. Deglaze with Vodka:

Pour in the vodka and simmer for 3-4 minutes, allowing the alcohol to cook off slightly.

4. Add Tomatoes:

Stir in the crushed tomatoes. Reduce the heat to low and simmer for 20-30 minutes, stirring occasionally, until the sauce thickens slightly.

5. Add Cream and Cheese:

Stir in the heavy cream and grated Parmesan cheese. Simmer for another 5 minutes, letting the flavors meld. Season with salt and pepper to taste.

6. Serve:

Toss the sauce with your favorite pasta (penne or rigatoni work beautifully). Garnish with fresh basil and additional Parmesan, if desired.


Tips:

• Use good-quality vodka for the best flavor.

• If the sauce is too thick, you can thin it out with a splash of reserved pasta cooking water.

• For extra richness, you can add a little more Parmesan or a knob of butter at the end.
